BerriesOkay. I’m not a big one on desserts. Not because I don’t like them, but because I don’t want to take extra time in the kitchen to make them, and I live 30 minutes from anywhere that I could buy them. However, there is one super quick dessert of which I am very fond. I use this for an FHE dessert, a snack, or as part of a nice breakfast, or in this case, as a Fourth of July dessert since I can get red and blue berries and top them with white cream for the red, white, and blue of the Unites States flag.

Fourth of July Berries and Cream

4 cups frozen berries, preferably a mix of red and blue berries, thawed or partially thawed

Cream and sugar or stevia to taste (I prefer NuNaturals’ Vanilla Stevia.) You could also get that fancy shoot-out-of-the-bottle whipped cream, which definitely adds a lot of fun to this dessert! Here’s an example of that type of whipped cream, but note that I haven’t tried this brand – I’m just giving it as an example of what I’m talking about.

Directions for cold berries and cream: The main thing is to remember to thaw the berries ahead of time. If you forgot this step, just heat the berries slowly on the stove top or on low in the microwave until just thawed. Add the cream and sweetener. I like to use 3-5 drops of NuSweet’s vanilla stevia; my husband likes to use about a teaspoon of sugar. Stir until the cream turns pinkish purple or your berries’ color. Alternatively, spray on the canned whipped cream! Savor slowly.

Directions for warm berries and cream: If you want a warm dessert, like berry pie filling or berry cobbler, heat the berries on the stove or in the microwave. If the berries are straight from the freezer, rinse off any ice crystals. This almost always prevents that freezer burn taste some frozen foods take on.

When the berries are warm, add one drop of doTERRA’s lemon essential oil and top with cream and sugar as above. If you want to go for a crumb cobber-type dessert, sprinkle some granola on top of the berries. A great homemade recipe can be found at the post Tina’s Homemade Granola. Soooo good.

*PS – I do not actively teach or sell doTERRA oils, but I use them at home a lot and they are wonderful for enhancing flavors in food. I do know some people that could teach you about them if you’d like. If you would like to know more about doTERRA essential oils, contact me here.
